Tomato Tomatoe's Steak Fajitas

This steak fajita is what happens when weekend vibes meet serious flavour goals. Think tender, juicy striploin seared to perfection, sweet caramelized peppers and onions tossed in my secret homemade fajita spice, and a creamy, tangy guac that’s basically sunshine on a tortilla. Perfect for when you wanna impress but keep it chill. Grab your pan, your appetite, and let’s make some magic happen.

Ingredients

  • 5-6 bell peppers
  • 3 white onions
  • 4 tbsp homemade fajita seasoning blend(4 tbsp paprika, 2 tbsp sugar, 3 tsp sea salt, 3 tsp onion powder, 3 tsp garlic powder, 2 tsp ground cumin, 1 tsp cayenne pepper, 1 tsp dried parsley)
  • 2 striploins
  • 3 avocados
  • 1 clove garlic
  • Handful fresh cilantro
  • 1 lime
  • 2 tbsp red onion
  • Freshly cracked pepper & salt
  • Tortilla shells
  • Neutral oil

Directions

  1. Using a kitchen stick, mash the avocados and mix with grated garlic, fresh lime juice, cilantro, and red onion. Season with salt and pepper.
  2. Bring the steaks to room temperature and pat them dry with a paper towel to remove any moisture.
  3. Heat your cast iron pan to medium-high heat and add neutral oil to coat the bottom. Once hot, season the steak with salt and pepper and add to the pan. Cook steaks to medium rare by searing both sides for about 3 minutes or until a golden crust forms. Remove and set aside to rest.
  4. In the same pan, add peppers and onions. Let them caramelize. When almost done, add fajita seasoning, salt, and pepper. Toss and cook for a few more minutes.
  5. Assemble the fajitas with guacamole, steak, peppers, and your desired toppings.
