Tomato Tomatoe's Steak Fajitas
INGREDIENTS:
5-6 bell peppers
3 white onions
4 tbsp homemade fajita seasoning blend

(4 tbsp paprika, 2 tbsp sugar, 3 tsp sea salt, 3 tsp onion powder, 3 tsp garlic powder, 2 tsp ground cumin,
1 tsp cayenne pepper, 1 tsp dried parsley)
2 striploins
3 avocados
1 clove garlic
handful fresh cilantro
1 lime
2 tbsp red onion
freshly cracked pepper & salt
tortilla shells
neutral oil
DIRECTIONS:
1. Using the kitchen stick, mash the avocados and mix with grated garlic, fresh lime juice, cilantro and red onion. Season with salt and pepper.
2. Bring the steaks to room temperature and pat them dry with a paper towel to remove any moisture.
3. Heat your cast iron pan to medium high heat and add in neutral oil to coat the bottom. Once the pan is hot, season the steak with salt and pepper and add the steak to the pan. Cook the steaks to medium rare by searing on both sides for roughly 3 minutes. Or until a golden crust has developed. Remove the steaks and set aside to rest.
4. In the same pan, add the peppers and onions. Let these caramelize. Once the peppers are almost finished cooking, add fajita seasoning, salt and pepper. Toss the peppers in the seasoning and cook for a few more minutes.
5. Assemble the fajitas with the guacamole, steak, peppers and your desired toppings.
